What is the difference between ceremony and culinary grade?

Using "Tencha" leaves harvested in early spring (first flush).
Turning the leaves into powder with a stone mill.

Using tea leaves harvested in either early July or early October (second/third flush).
Turning the leaves into powder with machine mill.

About the plantations
Asamiya is one of 5 major tea plantations in Japan.
Asamiya tea was judged among the best teas in Western Japan back in 1853.
The plantation is in the highlands of Japan, approximately 300-400 meters (984-1312 ft.) above sea level.
This environment generates a drastic change in temperature from daytime to night.
The resultant fog helps grow its high-quality green tea leaves.
